Bay seniors might balk at saluting the arrival of Spring by paying $8 for a dozen eggs but the ones available from Marin Sun Farms are well worth it. I don’t know (and frankly don’t care) about the home life of their hens and their holistic,nutritional,organic and sustainable differences, if any. But the flavor is remarkable. The yolk is colored as bright as a yellow cab and the taste is rich and creamy. I always resisted Alice Water’s theology of finding gastronomic heaven in a perfect lettuce leaf but with these eggs I enthusiastically agree. You’ll find them at the Farmers Markets at the Ferry Plaza and the Marin Civic Center as well as Rockridge’s Market Hall.
